- 2 large tart apples, peeled, cored, and thinly sliced
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ⅔ cup all-purpose flour
- ¼ teaspoon salt
- 3 tablespoons unsalted butter, divided
- 3 large eggs
- ⅔ cup milk
- 1 tablespoon honey
- 1 teaspoon vanilla extract

- Preheat the oven to 425 F. Place a 9- or 10-inch cast-iron skillet in the oven while it heats up.
- In a medium bowl combine the sliced apples with the brown sugar and cinnamon, gently mixing until the slices are coated.
- In a large bowl whisk together the flour and salt and set aside.
- Melt 1 tablespoon of butter in a microwave-safe bowl and let it cool slightly.
- Whisk together the eggs, milk, honey, vanilla extract, and 1 tablespoon of melted butter in a large measuring cup.
- Add the wet ingredients into the bowl with the flour and salt and whisk until combined.
- Carefully remove the cast-iron skillet from the oven.
- Add the remaining 2 tablespoons of butter to the bottom of the pan and let it melt to coat the pan.
- Arrange the apple slices over the melted butter.
- Pour the batter over the apple slices.
- Bake in the oven for 20-25 minutes, until it becomes puffy and golden.
- Serve hot with syrup or confectioners' sugar.
